    (Saccharina Latissima)

The power and freshness of the sea on your plate! Discover the briny and sweet taste of kombu seaweed !

Preserved in sea salt, our fresh kombu seaweed (variety Saccharina Latissima) keeps for 6 months in the refrigerator. We recommend consuming it after two or even three desalting baths.

🌿 Kombu seaweed can also be used to make a broth. Simply bring water with pieces of fresh kombu, herbs, and vegetables to a boil. Let it steep for 5 to 10 minutes with the heat off, then remove the kombu strips. This broth can be consumed plain with vegetables, it perfectly complements soups, or it can replace the cooking water for grains or legumes.

Kombu is actually the base ingredient of a traditional Japanese broth called "dashi." This seaweed alkalizes dishes in general. When used in the preparation of tomato sauce, it neutralizes the acidity.

The largest kombu leaves can be used to wrap other ingredients and be presented in papillotes or pouches. Kombu broths and infusions promote detoxification of the body and weight balance.

🌿 Kombu seaweed is considered in the East as the medicinal seaweed, a seaweed of health and longevity, and it means "happiness" in Japanese.

This queen of the seas lives in a true forest. Brown in color, it can reach up to 6 meters in length.

For its countless properties, kombu seaweed has been sought after since antiquity, particularly for its richness in iodine. Kombu contains 20 to 30% mineral salts, which is 8 times more calcium than milk, 5 times more iron than spinach, and is also very rich in potassium and sodium. It contains vitamins A, B1, B2, niacin, B6, B12, C, E, F, K, and PP. It also contains nearly 10% protein and 60% carbohydrates: energy guaranteed !

This seaweed is also known for its heavy metal chelating properties. Kombu has an interesting property of accelerating the cooking of grains and legumes, also making them more digestible. It contains sodium glutamate, which is a natural flavor enhancer.

    > Manual collection on the foreshore – From March to June

    - Conservation : in the refrigerator

    - Delivery:The shipment of seaweed is carried out on a just-in-time basis, and a few additional days may sometimes be necessary to process your order, depending on the day we are restocked. Seaweed can easily withstand several days of travel without refrigeration, even in high heat, thanks to their salt bath packaging.

You will receive an email on the day your package is shipped, followed by your tracking number the next day.

It happens that the seaweed releases a bit of water during transport, despite double zip packaging. This is rare, but if your box arrives wet, it's not a problem. Please accept your package and contact us by email to discuss the situation. In 10 years, we have always found amicable arrangements, but refusing fresh goods means the goods are lost, and we wish to avoid these scenarios.
