🌱 Arugula sprouts have an extremely pleasant, spicy, and aromatic flavor, slightly more intense than that of the mature salad. The bitterness of arugula acts as a digestive tonic with aperitif virtues.

> However, these are mucilaginous seeds, and they cannot germinate directly on a flat, airtight surface. They require a substrate and cannot germinate properly without the germination support that stabilizes the gel they produce.

- Sprouted arugula is particularly rich in vitamin C, making it an excellent stimulant and a true energy booster! It also contains vitamins (A, B1, B2, B3, B9, and K). Vitamin B9, in particular, contributes to cell regeneration and the proper functioning of the nervous system.
- Arugula has a high mineral salt content: sodium, potassium, calcium, magnesium, phosphorus...
- Its sulfur content gives it purifying properties and has a regenerating effect on the skin and hair.
- Arugula also contains carotenoids with antioxidant properties (lutein and beta-carotene) in greater quantities than other salads and lettuces, as well as flavonoids (particularly quercetin, which has anti-inflammatory properties and regulates blood pressure).
- Like cabbage, broccoli, and radish, arugula is part of the Brassicaceae family: its glucosinolates transform into isothiocyanates upon contact with the intestinal flora. According to several studies, this mechanism may help reduce the risk of cancer.
