Watercress seeds to germinate, in doypack of 350g.
Watercress (Lepidium Sativum) is part of the same family as cabbage, turnips or radishes: crucifers. The word "watercress" comes from the old French "kresso" which means "crawling". Usually eaten in leaf, in salads, soups or pestos, try it in sprouted seeds to make the most of its benefits!
The flavor of watercress is pronounced, pungent. It brings a touch of character to your salads, dishes, sandwiches and green juices.
Soaking : 1 hour
Germination : 3 to 7 days
CAUTION: These are mucilagenous seeds are mucilaginous seeds and cannot germinate directly on an airtight flat surface. They require a substrate, and cannot germinate properly in the absence of the germination medium which stabilizes the gel they produce.
Biovie has developed small cellulose germination mats specifically intended for the germination of mucilaginous seeds in the Easygreen automatic germinator. These mats can also be used in a suitable rectangular container. More information here: Mats
You can also use the glass sprouter, which can be found here.
Its particularities:
• Good for the eyes
Watercress contains lutein and zeaxanthin, these 2 carotenoids are known to limit macular degeneration and limit the risk of cataracts and retinitis pigmentosa.
• Prevents the onset of cancer
Green vegetables, like watercress, contain isothiocyanates which block the mechanisms of cancer, both in the very early stages and during tumor progression (study here). Watercress is particularly indicated in the fight against colorectal cancer, the ones of prostate and lungs.
• Antioxidant
Rich in beta-carotene (from the A provitamin family) that our body then synthesizes in A vitamin, it could improve certain functions of the immune system and prevent cardiovascular disease. A vitamin is essential for cell differentiation and growth, as it participates in the transcription of certain genes and the synthesis of certain proteins. It also promotes iron absorption and appears to play a role in regulating inflammatory responses.
• Good for bones
Watercress is a good source of K vitamin, which contributes to good bone health by maintaining bone density, and rutin, which studies show that it helps strengthen bones, bone tissue and reduce the risk of fractures. It also contains calcium: the special feature is that it is highly bioavailable (67% can be absorbed and used by the body, twice as much as milk!)
• Support your good mood
Like all foods of the cruciferous family, watercress can help regulate mood thanks to the many minerals it contains (magnesium, potassium, B and C vitamins in particular). This study classifies it as one of the foods that can improve states of depression.
