Mangoes of the Nam Dok Mai variety, one of the most popular in Thailand for its very sweet, fiber-free flesh. It is a variety that is not widely marketed in Europe because it does not support transport well, once ripe it is very soft and the absence of fiber means that it can be damaged more easily than the other varieties. Freeze-drying therefore enables you to (re)discover the taste of this exceptional variety.

The fruits are grown in a climate conducive to their growth (exotic fruits) and above all, they are picked at full maturity just before being freeze-dried. It is the guarantee of a quality product. Our supplier is not certified organic but the cultivation is and the fruits are certified "without pesticide residue".

This technique appeared in France at the beginning of the 20th century to dry food by sublimation: the product is first frozen, before proceeding to the evaporation of its water under vacuum. Thus, water passes directly from a solid state to a gas without passing through the liquid state! Because there is no heat intervention, freeze-drying retains the volume, appearance and all the benefits of the food.
¤ Like most fruits, mango contains many nutrients that prevent cancers manifestation. Its peculiarity lies in the presence of pectin, beta-carotene and C vitamin which counter the formation of cancer cells and are indicated against cancers of the colon (study here), breast (study here) or the prostate. These anti-oxidants are also very good allies of the immune system, they help protect our body against free radicals.
¤ Mango is good for the health of the eyes: it is particularly rich in A vitamin, a very beneficial vitamin for our eyes. This helps maintain good eyesight and prevent dry eyes. It also contains zeaxanthin and lutein, two antioxidants that help filter out bad UV rays to protect the eyes from the damaging action of the sun. Thanks to all this, mango therefore helps prevent age-related macular degeneration.
¤ The mango makes the skin young and beautiful: thanks to the A and C vitamins it contains, the mango participates in the production of collagen. However, by protecting blood vessels and maintaining healthy body tissues, collagen helps the skin to remain firm, and therefore to slow down its aging.
¤ Mango also has a very beneficial effect on blood pressure. This is because the potassium and magnesium it contains help regulate the heart rate and keep blood pressure at normal levels. It could therefore help those with hypertension.
¤ Its high B6 vitamin content is good for the brain. This vitamin helps keep neurotransmitters healthy, so they always work as well. But it goes further: in addition to preserving our cognitive functions, it also helps to improve them. So, not only is mango beneficial for memory, but it also helps in improving concentration. With all this, B6 vitamin helps lower the risk of dementia in the elderly.

Thailand is the main cultivation region of the Nam Dok Mai mango.
The mango tree produces correct fruits from 4 years and can live 120 years. Mangoes are harvested between 90 and 120 days after flower fertilization.
The fruits are certified as "pesticide residue free", quite simply because there is no need for them during cultivation.

Storage: Store in a dry place. Once opened, mangoes can regain some moisture and become less crunchy over time.
