Kefir is a traditional drink that is reappearing mainly on organic shelves. There are two types of kefir, which do not require the same ferments: fruit kefir and milk kefir (one cannot be made with the grains and vice versa). Here we are talking about fruit kefir!

The traditional recipe used for fermentation calls for water, sugar, a slice of lemon and a dried fig. A sparkling drink is then obtained, with a tangy, lively and very slightly alcoholic taste (less than 1%). Like other fermented drinks: it contains probiotics, antioxidants and other nutrients, so it contributes to the well-being of your digestive system.

🍶 All the advantages of fresh kefir grains
Fresh kefir grains are more active and produce better quality kefir than dehydrated grains. Live, they contain a high content of probiotics. They are also easy to look after, multiply naturally and can be used endlessly.
Do you know the term SCOBY? It is actually an English acronym for kefir grains: Symbiotic Culture Of Bacteria and Yeast
which translates to “symbiotic culture of bacteria and yeasts”.
🍶 How to make your kefir?
Before handling the grains, it is crucial to wash your hands carefully to avoid contaminating them and to ensure that you use clean utensils and containers. Use warm water and soap to make sure your hands are clean.
The process is done in several stages: a first fermentation of 24 hours in water with sugar, a dried fig and slices of lemon. Then comes the harvest of the grains that are left aside (either dormant in the fridge, or left for another fermentation). And finally the second fermentation in the bottle which allows to obtain the sparkling, a less sweet taste and especially the appearance of probiotics.
All the sugar is consumed during fermentation, it is not found (or little) in the final drink.

The intestinal microbiota corresponds to all the microorganisms that colonize the digestive tract. Bacteria are widely represented, with more than 1,000 species and 7,000 different strains. Our intestinal flora is formed around the age of 3 or 4 years, so it is important to eat a very diversified diet because the more you have a rich and balanced diet, the more likely you are to have a diversified flora.
Scientists estimate that between 10 and 30% of our daily food intake is digested by the microbiota to produce energy or compounds essential to our well-being (such as K vitamin or group B). The microbiota also has a central role in the protection of our digestive system, since it participates in the renewal of the tissue of the intestinal wall and in the production of mucus which strengthens the intestinal barrier.
In addition, it allows the detoxification of undesirable molecules of food and/or environmental origin and the elimination of infectious agents in the intestine.
We know that it plays an interface role between food and our immune system, our central nervous system and our energy metabolism.
It is therefore valuable to take care of it and feed it with good bacteria through our diet.
That being said, kefir in particular has other benefits:
– Improves digestion
Kefir is a hydrating drink that promotes better transit. Like all fermented products, bringing good bacteria and probiotics to our body allows it to spend less energy in digestion and promote the assimilation of nutrients.
– Boosts the immune system
Nutrients are increased tenfold in a fermented drink, so there is a good amount of vitamins, enzymes and antioxidants in a glass of kefir. It contains in particular B vitamins, calcium and magnesium, which can contribute to strengthening the immune defenses and the bones.
Probiotics, as we have seen above, have an essential role in defending against harmful bacteria and viruses, they help our immune system from our digestive tract.
– Promotes heart health
The immune enhancements brought about by probiotics also reduce the risk of infections and inflammation that can damage blood vessels and cause heart disease. Drinking kefir could also lower bad cholesterol levels, helping to eliminate unwanted fats that can build up in the arteries and therefore protecting the heart from the damaging effects of cholesterol.
– Helps with weight loss
Kefir is very low in calories! It will replace sugary drinks wonderfully with the advantage of not making you gain weight and keeping the pleasure of tasting. Its effect on digestion can reduce cravings for fat and sweets, plus it is your ally against cravings.
- Allergies
Ongoing studies on mice show that drinking kefir could have an anti-inflammatory effect in the case of allergies and asthma, reducing the symptoms of these 2 conditions. The multiplicity of recipes for making kefir as well as the different scoby make studies difficult to generalize.
Axel and Cléo founded Orisae in 2020, in the midst of the COVID pandemic. This couple of designers wanted to put more meaning into their lives and therefore devoted their time to doing everything so that everyone could discover and adopt the healthiest, most economical, most ecological and above all most gourmet method: fermentation. Increasingly aware of the impact of food on living things, our health and our environment, they started from scratch and launched a crowdfunding campaign that almost tripled its objective. Supported by hundreds of people in their project, the kits for kefir and for kombuchas are then born, accompanied by a real exchange platform so that everyone can share their adventure of home fermentation. Their objective ? Make fermentation accessible, simple, fun and above all friendly!
Their workshop is located in Strasbourg and everything is made on site. We can even say that they breed ferments!

Storage: Store in the fridge before use. It is then recommended to put them in a glass jar with filtered water and a spoonful of powdered sugar and cover the whole thing, either tightly closed, or simply covered with a cotton cloth fixed with an elastic band. Place the jar in the refrigerator and replace the water regularly (about every 2 weeks).
Delivery: sent by Colissimo once a week from the place of production (separate package from your Biovie order), you will receive your kit at home at the beginning of the week.
