Harvested with respect from wild trees in the Pyrenees, the pure birch juice is combined with an extract of blackcurrant buds (grown and produced on-site by La Sève Cathare), and then preserved as is for several months until stabilized. The naturally occurring sugars will initiate fermentation, which will give the birch sap a slightly acidic taste. This lactic fermentation allows the sap to be preserved for several years without any addition or thermal transformation, and greatly enhances its benefits.
Birch juice has been used since ancient times for its draining and remineralizing properties. Forgotten for some time, it has made a comeback in our routines to the great benefit of our bodies.
This Elixir of Life is harvested from February to April, at the start of spring, when the sap rises in the tree to awaken the buds. A nutritious liquid, it flows through the tree's vessels, transporting water and nutrients to the branches, providing the energy required for the growth of new leaves and flowers.
🌳 Why ferment the sap?
Bio-fermentation is the preservation method that best retains nutrients, enhances nutritional value, and ensures better digestibility of its vital elements. This fermentation enriches the birch juice with vitamins and trace elements, whereas pasteurization or sterilization depletes it. The precious elixir remains alive, rich in enzymes, vitamins, minerals, and bioavailable trace elements. Probiosève (probiosap) naturally preserves at room temperature (no need to refrigerate) without any preservatives or pasteurization.
🌳 When and how to take it?
Fermented birch sap is ideal for seasonal change treatment; it pairs well with a mono-diet or a fast for a deep cleansing of the body. Its high bioavailable mineralization and richness in antioxidants provide vitality and dynamism, the blackcurrant bud extract provides flexibility and joint well-being for a true rejuvenation.
It is recommended to take 15cL (a small glass) every morning for 3 weeks.

🌳 Blackcurrant bud extract
It is made from the blackcurrants that grow alongside birches in the Pyrenees. This is the same extract used in gemmotherapy: the buds and young shoots carry all the information of the plant, representing the plant's power in concentrated form.
The buds are left to macerate immediately after harvest in spring water, alcohol, and organic vegetable glycerin derived from Karanja oil; these three ingredients extract the various active principles from the blackcurrant buds.
Added to the birch sap, it reveals its anti-inflammatory and anti-rheumatic effects and gives it a nice hint of red fruit flavor.

Blackcurrant:
The blackcurrant bud extract is known for its soothing effect on inflammatory pains, improving joint comfort, and strengthening the immune system. It is also a powerful drainer that pairs perfectly with birch water. It also aids the body in resisting bacterial and viral infections as well as reducing allergic inflammations.
The birch sap cure:
It will allow you to "cleanse" your body and prepare your system for the seasonal change. A "reset" due to its draining effect on the emunctories.

The small team at "La Sève Cathare" began harvesting birch sap in 2011 on the Sault plateau at 900 meters above sea level, in pristine Pyrenean forests free from chemical or electromagnetic pollution.
The trees are consulted and thanked during the harvest for their generosity and the sharing of their precious nectar. "La Sève Cathare" operates with respect and kindness towards the trees to offer a high-quality product.

Packaging: 3L bag-in-box. Pouring cap included. The bag-in-box design ensures that air does not enter the bag when pouring, thus preserving the juice for a longer period.
