🥜 An artisanal manufacturing process
Organic almonds are soaked in purified water for several hours. They absorb the water, which removes anti-nutrients and awakens the seed's germination process.
Once soaked, they are rinsed and dehydrated at a low temperature (42°C) to be preserved for a long time and to retain their good nutrients.
Finally, they are ground with a stone mill, an ancient process that prevents the almonds from heating up. Stone is a natural material that preserves the vitality of the food. This technique results in slightly grainy purees rather than completely smooth ones.
Result: nutritional intake equivalent to consuming a handful of whole almonds.

Activation, which can also be called pre-germination, has two main benefits:
- the elimination of phytic acids and anti-nutrients. These compounds are natural; they allow the seed to preserve itself over time and wait for the right moment to germinate. However, once in our digestive system, they prevent the proper absorption of other nutrients. An excessive amount of these compounds can also cause discomfort, such as inflammation of the digestive tract.
- reactivate the enzymatic and nutritional power of seeds. Soaking activates germination: enzymes start working to break down macronutrients, the amount of vitamins increases, and minerals become bioavailable.

Almonds are among the most popular nuts in our daily diet. Here is an overview of their main nutritional benefits:
- Vitamin E: Almonds are an excellent source of vitamin E, a powerful antioxidant essential for various bodily mechanisms. Combined with omega-3s, vitamin E improves the appearance and hydration of the skin, slows down cellular aging, and protects the brain against age-related degeneration. A vitamin E deficiency is often observed in people with Alzheimer's disease. Additionally, this vitamin plays a crucial role in cell membranes and the formation of red blood cells.
- Heart Health: Rich in lipids, primarily in the form of monounsaturated and polyunsaturated fatty acids, almonds are beneficial for the cardiovascular system. These "healthy" fats help prevent heart disease by regulating cholesterol and protecting the arteries. The optimal balance between omega-3 and omega-6 in almonds contributes to heart health.
- Proteins: Almonds are rich in protein, containing about 25 g of protein per 100 g. This is particularly beneficial for vegetarians and vegans, as in addition to their protein content, almonds are alkalizing. This helps reduce body acidity, thereby preventing joint pain, osteoporosis, and strengthening the immune system and overall well-being.
- Magnesium: The magnesium present in almonds plays a key role in stress management, mood regulation, fatigue reduction, blood sugar regulation, and relief from premenstrual syndrome. Whole almonds contain about 282 mg of magnesium per 100 g, making them an excellent dietary source to meet daily needs.
- Fibers: Almond puree also contains dietary fiber, although the content may be slightly lower than that of whole almonds due to the grinding process. However, it remains a good source of insoluble fiber, promoting digestion and intestinal health.
