Go even further in nutrition with Kaly's range of 100% raw and activated nut butters!

    Products handcrafted in limited quantities.

With vegetarian or vegan diets, nut butters have become essentials in our pantries, allowing us to create a vast variety of recipes and providing the proteins and healthy fats necessary for a balanced diet.
But what about your digestion and the anti-nutrients found in raw nuts and seeds? Low-temperature grinding does not eliminate them.

Problem solved with the activated purees High nutritional value: rediscover the sweetness of the taste of organic hazelnuts combined with perfect digestion and assimilation thanks to soaking.

    🥜 An artisanal manufacturing process

Organic hazelnuts are soaked with their skin in purified water for several hours. They absorb water, which removes anti-nutrients and awakens the seed's germination process.

Once soaked, they are rinsed and dehydrated at a low temperature (42°C) to be preserved for a long time and to retain their good nutrients.

Finally, they are ground with a stone mill, an ancient process that prevents the hazelnuts from heating up. Stone is a natural material that preserves the vitality of the food. This technique results in slightly grainy purees rather than completely smooth ones.

Result: nutritional intake equivalent to consuming a handful of whole hazelnuts.

🥜 Learn more about activating nuts and seeds

Activation, which can also be called pre-germination, has two main benefits:

    - the elimination of phytic acids and anti-nutrients. These compounds are natural; they allow the seed to preserve itself over time and wait for the right moment to germinate. However, once in our digestive system, they prevent the proper absorption of other nutrients. An excessive amount of these compounds can also cause discomfort, such as inflammation of the digestive tract.

    - reactivate the enzymatic and nutritional power of seeds. Soaking activates germination: enzymes start working to break down macronutrients, the amount of vitamins increases, and minerals become bioavailable.

    > the stored lipids are broken down into easily assimilable fatty acids without effort
    > the stored proteins are broken down into immediately bioavailable amino acids
    > the complex sugars in reserve are broken down into simple sugars

🥜 How to use activated hazelnut puree ?

Activated whole hazelnut puree has a slightly sweeter taste than a classic puree. It is used in the same way, in savory or sweet dishes, on toast instead of butter, in all kinds of sauces, frawmages, in a smoothie or ice cream, in baking...

The hazelnut is an oilseed appreciated not only for its irresistibly distinctive taste but also for its multiple nutritional benefits. It is often used in sweet recipes, but it is also delicious to enjoy with dishes, try it for yourself! Here are the main benefits of hazelnuts:

    Vitamin E: The anti-aging and brain-protecting shield
The hazelnut is an excellent source of vitamin E, a powerful antioxidant crucial for many bodily processes. Combined with omega-3s, it improves skin hydration, slows down cellular aging, and contributes to more radiant skin. Additionally, it plays a preventive role against neurodegenerative diseases like Alzheimer's, as a vitamin E deficiency is often observed in individuals with this condition. Vitamin E also participates in the formation of red blood cells and is present in the cell membranes of our body.

Heart health: An ally for your heart
The fat composition of hazelnuts is similar to that of olive oil, rich in monounsaturated fatty acids, particularly oleic acid, and low in saturated and polyunsaturated fatty acids. This lipid composition helps reduce cardiovascular risk factors by improving the blood lipid profile, lowering blood pressure, and optimizing glucose metabolism. The antioxidant properties of hazelnuts also contribute to the protection of the cardiovascular system.

    Manganese: A multifunctional mineral
The manganese present in hazelnuts is essential for various metabolic processes, including the metabolism of lipids, proteins, and carbohydrates. It helps specific enzymes neutralize free radicals, thereby slowing down cellular aging. Additionally, manganese plays a crucial role in the production of insulin, the hormone that regulates blood glucose levels, and in the formation and preservation of bone mass. Consuming 100 mL of hazelnut milk covers 28% of the daily manganese requirements.

Copper: Support for metabolism and immunity
Copper, also present in good quantities in hazelnuts, is an enzymatic co-factor involved in many metabolic processes, including those of lipids and complex carbohydrates. It facilitates iron absorption and participates in the production of red blood cells. In tandem with manganese, copper is essential for the formation and maintenance of bones. It also contributes to the production of melanin, the proper functioning of the nervous system, and the strengthening of the immune system due to its antibacterial properties.

    Kaly

A perfectly well-chosen name: the quality of the raw materials, the artisanal manufacturing process, the nutritional quality of the products thanks to activation, everything has been designed to create very good foods with real nutritional utility, in short, "quality" products.

And then Kali is also the name of the Hindu goddess of preservation, transformation, and destruction. A perfect protector to accompany this range of healthy, nourishing, and delicious products.

Behind Kaly, you will find Julie: a young entrepreneur who is passionate about combining naturopathy, nutrition, raw food, and indulgence. She prepares these little wonders by herself in her workshop in Alsace for everyone's greatest pleasure.

She trained in naturopathy a few years ago as part of a personal and professional transition. The goal was to improve her health and gain a deeper understanding of how it works, as well as the functioning of the human being as a whole. While discovering certain subtleties of diet and nutrition, she was looking for certain products but couldn't find them in stores; and that's how Kaly was born.

Kaly is part of this desire to provide more resources for those who wish to move towards better health.
