Raw Cocoa Delight - Hazelnuts

We are pleased to offer you a Activated hazelnut puree, in a chocolate spread version!

Associated with the authenticity of raw cocoa for a raw delight, this hazelnut puree is no added sugars, and with less than 16% dates. Yum !

Purees made artisanally and in limited quantities.

With vegetarian or vegan diets, nut butters have become essentials in our pantries, allowing us to create a wide variety of recipes and providing the proteins and healthy fats necessary for a balanced diet.
But what about your digestion and the anti-nutrients contained in raw nuts and seeds? Low-temperature grinding does not eliminate them.

The activated purees hold a Nutritional value much higher than traditional nut butters (even those made from nuts ground at low temperatures): with the process used here, you get the smooth taste of organic hazelnuts combined with perfect digestion and assimilation thanks to soaking.

🥜 An artisanal manufacturing process

The organic hazelnuts are soaked with their skin in purified water for several hours. They absorb water, which removes anti-nutrients and awakens the seed's germination process.

Once soaked, they are rinsed and dehydrated at a low temperature (42°C) to be preserved for a long time and to retain their good nutrients.

Finally, they are ground with a stone mill, an ancient process that prevents the hazelnuts from heating up. Stone is a natural material that preserves the vitality of the food. This technique results in slightly grainy purees rather than completely smooth ones.

Result: nutritional intake equivalent to consuming a handful of whole hazelnuts.

Activation, which can also be called pre-germination, has two main benefits:

- the elimination of phytic acids and anti-nutrients. These compounds are natural; they allow the seed to preserve itself over time and wait for the right moment to germinate. However, once in our digestive system, they prevent the proper absorption of other nutrients. An excessive amount of these compounds can also cause discomfort, such as inflammation of the digestive tract.

- reactivate the enzymatic and nutritional power of seeds. Soaking activates germination: enzymes start working to break down macronutrients, the amount of vitamins increases, and minerals become bioavailable.

This puree, as its name suggests, is absolutely delicious. It is used in the same way as a traditional chocolate spread, on toast, in crepes, in a smoothie or ice cream, in baking...

> The hazelnut is an oilseed appreciated not only for its irresistibly distinctive taste but also for its multiple nutritional benefits. It is often used in sweet recipes, but it is also delicious to enjoy with dishes, try it for yourself! Here are the main benefits of hazelnuts:

Vitamin E: The anti-aging and brain-protecting shield
The hazelnut is an excellent source of vitamin E, a powerful antioxidant crucial for many bodily processes. Combined with omega-3s, it improves skin hydration, slows down cellular aging, and contributes to more radiant skin. Additionally, it plays a preventive role against neurodegenerative diseases like Alzheimer's, as a vitamin E deficiency is often observed in individuals with this condition. Behind Kaly, you will find Julie: a young entrepreneur who is passionate about combining naturopathy, nutrition, raw food, and indulgence. She prepares these little wonders by herself in her workshop in Alsace for everyone's greatest pleasure.

She trained in naturopathy a few years ago as part of a personal and professional transition. The goal was to improve her health and gain a deeper understanding of how it works, as well as the functioning of the human being as a whole. While discovering certain subtleties of diet and nutrition, she was looking for certain products but couldn't find them in stores; and that's how Kaly was born.
